Mini Coconut Cream Cupcakes

We’ve teamed up with plant-based food blogger, Amy Lanza, to share our recipe for these Mini Coconut Cream Cupcakes – the most luxurious way to harness the natural, tropical creaminess of this delicious furry fruit (yes, that’s right, it’s not technically a nut!)
Inspired by the delectable ingredients in our Coconut Cream whipped body velvet – as part of our festive Cocoon Me Joy Drum – this is a recipe that’ll make you very popular this holiday season.

Mini Vegan Lemon Cupcakes Recipe
Makes: 28-30 mini cupcakes or 9-10 regular cupcakes
Time: 30 minutes plus cooling
Ingredients you’ll need:
Cupcakes:
240ml coconut milk (carton)
1 tsp lemon juice
180g plain flour
100g coconut or caster sugar
1½ tsp baking powder
½ tsp bicarbonate of soda
40g desiccated coconut
80ml (60g) sunflower oil
1 tsp coconut extract (or vanilla)
Frosting:
200g vegan butter
400g icing sugar, sifted
1 tsp coconut extract (or vanilla)
1-2 tbsp coconut milk, if needed
Topping:
Toasted coconut flakes
Method:
1. Preheat the oven to 160Fan/180*C and grease a silicone mini cupcake tray, or line a cupcake tray with cases.
2. Stir together the milk and lemon juice and leave for 5 minutes.
3. Add the flour, sugar, baking powder, bicarbonate of soda and desiccated coconut to a mixing bowl and whisk to combine.
4. Pour in the milky mixture, sunflower oil and coconut extract (or vanilla) and whisk to a smooth batter. Divide between the cupcake holes/cases – using 1 tbsp for mini cupcakes and 3 tbsp for normal-sized cupcakes.
5. Bake for 11-13 mins for the mini cupcakes and 20-22 minutes for normal-sized cupcakes or until golden and an inserted skewer comes out clean. Allow to cool fully on a wire rack.
6. Make the frosting by stirring or blending together the vegan butter, icing sugar, coconut or vanilla extract, add 1-2 tbsp coconut milk until thick and creamy.
7. Pipe the frosting onto the cupcakes and top with toasted coconut flakes.
